More Stuzzi, buffalo milk mozz

Went back to Stuzzi on Friday afternoon and it was packed as usual but there always seems to be a few seats available at the bar which is preferred for a drinker like me.  Unfortunately the beer is grossly overpriced which is keeping me from eating here more often.

I ordered the margherita with the mozzarella di bufala or buffalo milk mozzarella for those who aren’t pizzatalian.

Great stuff all around.  If you eat enough pizza you may be able to pick out the distinct flavor and texture differences between fresh mozz and buffalo milk mozz, especially since the buffalo milk mozzarella is aged.  You can pick out a more stinky cheese with the buffalo milk.  It’s a bit creamier and a little tougher.  The fresh mozz tends to blob around on a pizza, probably due to a higher water content.  The buffalo milk stuff is tougher, retains its shape better and just provides a different flavor.  Very few places do this as this type of cheese is quite a bit more expensive.  Definitely worth checking out.

Overall, this pie was better than the first one I had at Stuzzi.  Their crust is a bit less chewy but still plenty to chomp on.  I still wish they wouldn’t have such a large crust end but that’s just nit picking isn’t it?

  • No. Don’t. Really. It’ll only encourage them. Okay, maybe after a whole bunch of hard liquor, then it’ll be welcome in your belly. Otherwise, no.

  • I’ve just come home from Stuzzi. It’s my 5th or 6th time eating there. It is fabulous!!
    I am determined to taste everything available on the menu. Tonights’s special was fresh octopus pizza. I thought I knew how to make Tirimisu but when you taste the Tirimisu from Stuzzi’s you will realize that you can’t make Tirimisu. It MELTS in you mouth. Honestly I would say that the average Richmonder hasn’t had flavours like those available at this small local pizzaria dancing around in their mouth…maybe ever
    The mozerella is made right in the kitchen and you can taste that that is so. There is a desert that must be tried I can’t pronounce the name but it is home made Italian dreamy ice cream chocolate and vanilla put in to two chocolate shells about the size of a pear sliced in half with a cherry on top. It is UNBELIEVABLE.
    As for the pizza…I would say WOW. I love it. It’s crispy or maybe iwould go so far as to say burned…not burned…charred on the bottom…on the top it’s covered with that wonderful mozerella , fresh tomatoes and great ingredients of your choice. i had the arugula and anchovy pizza. I leave there feeling that I didn’t just have a meal but I had an experience.
    I also like the atmosphere. You can sit at the pizza bar and watch the pizzas being made and coming out of the over, you can sit at the other bar and have a drink or a glass of wine and eat there or you can sit in the casual seating of the tables where I’ve seen many people bring there small children or their dates . It works well for both.
    Thank you to the owner for bringing Stuzzi to Richmond. It’s a great little restaraunt to have in the Belmont Ave, Carytown district. Thank God people like the owner of Stuzzi are still brave enough to strike out on their own, take a risk and create something unique and and wonderful. Otherwise all flavor in the world would be lost to the corporate world.. From one small business owner to another …Way TO GO Stuzzi….
